  • 1 lb boneless skinless chicken, cut into bite-sized pieces
  • 1 package cheddar bay-style biscuits
  • 2 tbsp butter
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 ½ cups shredded cheddar cheese
  • 2 cups frozen vegetable mix peas, carrots, corn
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • Salt and pepper to taste

Method
 

  1. Preheat and prep - Preheat oven to 375°F (190°C) and lightly grease a casserole dish with butter.
  2. Prepare the chicken - Season bite-sized chicken pieces with salt, pepper, and garlic powder.
  3. Sauté aromatics - Melt butter in a pan and sauté onion and garlic until soft and fragrant.
  4. Make the creamy sauce - Add heavy cream and chicken broth, stir until slightly thickened. Adjust seasoning to taste.
  5. Combine ingredients - Add chicken and frozen vegetable mix to the sauce, stirring until everything is evenly coated. Transfer to prepared casserole dish.
  6. Top with biscuits and cheese - Arrange cheddar bay-style biscuits on top and sprinkle with extra shredded cheese if desired.
  7. Bake - Bake for 25-30 minutes until biscuits are golden brown and casserole is bubbly. Let rest for 5 minutes before serving.

Notes

    • You can easily substitute the chicken with shredded rotisserie chicken for convenience or ground turkey for a lighter option.
    • If you don’t have cheddar bay-style biscuit mix, crescent roll dough or puff pastry works well as a tasty alternative topping.
    • Adjust the cream and chicken broth ratio depending on your preference—use less broth for a thicker casserole or a little extra cream for a richer, creamier texture.
