For the Chicken
  • 500 g 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 1 tsp salt adjust to taste
  • ½ tsp black pepper
  • 2 tbsp olive oil
For the Creamy Sauce
  • 1 cup cottage cheese full-fat or low-fat
  • 2-3 cloves garlic minced
  • 1 small onion finely chopped
  • ½ cup chicken broth add more if needed
  • 1 tsp Italian seasoning
  • ½ tsp paprika optional
  • Salt and pepper to taste
Optional Add-Ins
  • 1 cup spinach
  • ½ cup mushrooms sliced
  • Red pepper flakes for spice

Equipment

Method
 

  1. Cut chicken into bite-sized pieces and season with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear chicken for 5-7 minutes until golden and mostly cooked.
  4. Add minced garlic and cook for 30 seconds.
  5. Blend cottage cheese and chicken broth until completely smooth.
  6. Pour sauce into skillet and reduce heat to low.
  7. Stir in parmesan cheese and mix until creamy.
  8. Simmer 2-3 minutes until slightly thickened.
  9. Adjust seasoning, garnish with parsley, and serve warm.

Notes

  • Always blend cottage cheese for a smooth sauce (non-negotiable).
  • Keep the heat low after adding sauce to prevent curdling.
  • Sauce will thicken as it cools. Add a splash of broth when reheating.
  • Full-fat cottage cheese gives the best creamy texture.
