Vegetable Pasta for Weak Digestion (Light, Easy & Cream-Free)

This vegetable pasta for weak digestion is light, gentle on the stomach, and full of flavor. Made with soft vegetables, minimal olive oil, and no cream or heavy spices, it’s perfect for lunch or dinner when you want a comforting, easy-to-digest meal.

Ingredients
  

  • Pasta - 200g / 7 oz penne, fusilli, macaroni
  • Carrot - 1 medium chopped
  • Zucchini - 1 small sliced
  • Bell pepper - ½ cup diced
  • Peas - ½ cup fresh or frozen
  • Garlic - 1 small clove optional
  • Olive oil - 1-2 tsp
  • Salt - to taste
  • Black pepper - a pinch optional
  • Fresh herbs parsley or basil - optional
  • Water or vegetable broth - ½ cup optional

Equipment

  • Colander or strainer
  • Large non-stick pan or skillet
  • Wooden spoon or silicone spatula
  • Knife and cutting board

Method
 

  1. Boil the Pasta: Bring a large pot of water to a boil with a pinch of salt. Add pasta and cook al dente. Drain and set aside, adding a tiny drizzle of olive oil to prevent sticking.
  2. Prepare the Vegetables: Chop vegetables into small pieces. Lightly sauté carrots, zucchini, bell peppers, and peas in 1-2 tsp olive oil for 3-5 minutes. Add a splash of vegetable broth or water to keep them soft.
  3. Combine Pasta and Vegetables: Add drained pasta to the pan with vegetables. Mix gently, season lightly with salt and a pinch of black pepper, and sprinkle with fresh herbs if desired.
  4. Serve Warm: Serve immediately while warm. Optional: add a soft-boiled egg or lightly sautéed chicken for protein.

Notes

  • Can be made without garlic or onion for sensitive stomachs or Jain diet.
  • Store in an airtight container in the fridge for up to 2 days. Reheat gently on stovetop or microwave with a splash of water or broth.
