Russian Blini – Perfect Golden Pancakes for Any Day

Russian blinis, the thin and delicious Russian pancakes, loved by my family and friends. When it comes to Russian breakfasts and celebrations, pancakes are always on the table. These delightful pancakes are not only versatile but also rich in history and tradition.

Ingredients
  

  • 1 cup all purpose flour
  • ½ cups milk
  • 2 eggs
  • 3 tablespoon unsalted butter
  • ½ tablespoon baking powder
  • 1 tablespoon sugar
  • ½ tablespoon salt
  • Vegetable oil

Method
 

Mix Dry ingredients
  1. Take a bowl & mix all-purpose flour, salt, and baking powder.

Mix Wet Ingredients
  1. In a large mixing bowl. Add milk, butter, and sugart. Whisk them together until smooth.

Prepare the Batter
  1. Add dry flour ingredients into the wet mixture slowly and continue whisking so it should be lumps lump-free. The batter should be thinner than regular pancake batter.

Heat the Pan
  1. Grease a non-stick skillet or frying pan with butter/oil and heat it over medium heat.

Cook the Blinis
  1. Pour a spoon full of batter into the pan and swirl it around into a thin layer. Cook until bubbles form, 1 to 2 minutes. Flip and continue cooking until brown. Remove to the platter.

Repeat the Process
  1. Repeat the same process with the rest of the batter. Cook more than one blinis at the same time.

Notes

  • Fold egg whites gently to keep blini light and airy.
  • Cook on medium heat to prevent burning and ensure golden color.
  • Serve immediately for best flavor and texture.
