Mix Dry ingredients
- Take a bowl & mix all-purpose flour, salt, and baking powder.

Mix Wet Ingredients
- In a large mixing bowl. Add milk, butter, and sugart. Whisk them together until smooth.

Prepare the Batter
- Add dry flour ingredients into the wet mixture slowly and continue whisking so it should be lumps lump-free. The batter should be thinner than regular pancake batter.

Heat the Pan
- Grease a non-stick skillet or frying pan with butter/oil and heat it over medium heat.

Cook the Blinis
- Pour a spoon full of batter into the pan and swirl it around into a thin layer. Cook until bubbles form, 1 to 2 minutes. Flip and continue cooking until brown. Remove to the platter.

Repeat the Process
- Repeat the same process with the rest of the batter. Cook more than one blinis at the same time.

Notes
- Fold egg whites gently to keep blini light and airy.
- Cook on medium heat to prevent burning and ensure golden color.
- Serve immediately for best flavor and texture.
