Ingredients
  

  • 1 lb 450g breakfast sausage
  • 6 large eggs
  • ½ cup shredded cheddar cheese
  • 4 small flour tortillas
  • 1 avocado sliced
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp butter or oil for cooking
  • Salt and pepper to taste
  • Optional toppings: salsa hot sauce

Method
 

Cook the Sausage:
  1. Heat a skillet over medium heat and cook the breakfast sausage until fully browned and cooked through. Break it into small pieces while cooking. Remove from the skillet and set aside.
Scramble the Eggs:
  1. In the same skillet, add a little butter or oil and cook the eggs over medium-low heat, stirring gently until soft and fluffy. Season with salt and pepper.
Warm the Tortillas:
  1. Heat the tortillas in a separate skillet or microwave until soft and pliable.

  1. Layer the cooked sausage and scrambled eggs on each tortilla. Sprinkle 1/2 cup of shredded cheddar cheese on top and let it melt slightly.
