Heat a skillet over medium heat and cook the breakfast sausage until fully browned and cooked through. Break it into small pieces while cooking. Remove from the skillet and set aside.
In the same skillet, add a little butter or oil and cook the eggs over medium-low heat, stirring gently until soft and fluffy. Season with salt and pepper.
Heat the tortillas in a separate skillet or microwave until soft and pliable.
Layer the cooked sausage and scrambled eggs on each tortilla. Sprinkle 1/2 cup of shredded cheddar cheese on top and let it melt slightly.
Top with avocado slices, chopped cilantro, and optional salsa or hot sauce. Serve immediately.
