Ingredients
  

  • 4 large eggs
  • 4 small tortillas whole wheat or regular
  • 1 cup shredded cheese cheddar or mozzarella
  • ½ cup diced bell peppers
  • ½ cup diced onions
  • Salt and pepper to taste
  • cooked turkey mushrooms, spinach, or any veggies
  • Beans

Method
 

  1. Crack all 4 eggs into a bowl, add a pinch of salt and pepper, and whisk until smooth. Dice bell peppers, onions, and any optional veggies or cooked protein you want to include. I usually add extra veggies or cooked protein I have on hand. It’s fun to mix and match.

  2. Heat a non-stick pan over medium heat with a little oil or butter & pour in the eggs, and scramble gently until just set. The smell of eggs cooking always makes the kitchen feel cozy. I set them aside once done.

  3. Lay the tortillas on the pan, sprinkle half of the cheese, then add the scrambled eggs, veggies, beans , and any optional protein. I top with the remaining cheese and fold the bare half of the tortilla over fillings to create a half moon shape. I love watching the cheese start to melt . Believe me, it’s so satisfying.

  4. Lightly grease the pan again if needed and cook each side 2-3 minutes until the tortilla turns golden and crispy and the cheese melts perfectly. Then cut it into wedges and serve warm sometimes with salsa, avocado, or even a little hot sauce. In my case, my family always dives in immediately!

  • You can customize the filling with your favorite veggies, cheese, or even cooked sausage for extra flavor.
  • Whole wheat or corn tortillas make a healthier alternative to white flour ones.
