  • 4 slices sourdough or artisan bread
  • 1 cup ricotta cheese
  • 2 cups fruit sliced (such as peaches, plums, bananas, apples, or berries)
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • ½ teaspoon cinnamon optional
  • 2 to 3 tablespoons honey
  • ½ teaspoon vanilla extract optional
  • Pinch of salt
  • Fresh mint or chopped nuts optional for topping

Method
 

  1. Toast the bread slices until golden and crisp using a toaster or grill pan.
  2. In a nonstick skillet over medium heat, melt the butter.
  3. Add the sliced fruit and brown sugar, then cook for 4 to 6 minutes until the fruit softens and becomes lightly caramelized.
  4. Stir in the cinnamon and vanilla extract, if using, and cook for another 30 seconds.
  5. In a small bowl, stir the ricotta with a small drizzle of honey and a tiny pinch of salt for extra flavor.
  6. Spread the ricotta mixture evenly over the toasted bread.
  7. Spoon the warm caramelized fruit over each toast.
  8. Finish with an extra drizzle of honey.
  9. Add fresh mint or chopped nuts on top if desired, then serve right away.
