Ingredients
  

  • 2 medium zucchinis sliced into fries
  • ¼ cup Parmesan cheese grated
  • ½ cup panko breadcrumbs
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 tbsp olive oil
  • Salt & pepper to taste

Method
 

  1. Wash and slice 2 medium zucchinis into fries, then pat them dry to remove excess moisture.
  2. In a mixing bowl, combine ¼ cup grated Parmesan, ½ cup panko breadcrumbs, 1 tsp garlic powder, ½ tsp paprika, salt, and pepper.
  3. Drizzle 1 tbsp olive oil over zucchini slices and toss to coat evenly.
  4. Dredge each zucchini slice in the breadcrumb mixture, pressing lightly so the coating sticks.
  5. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  6. Arrange zucchini fries in a single layer in the air fryer basket, ensuring they don’t overlap for crispy air fryer fries.
  7. Cook for 10-12 minutes, shaking or turning halfway through to achieve even browning.
  8. Check for desired crispiness. Cook an extra 1-2 minutes if needed for crunchier fries.
  9. Serve hot with your favorite dip, such as marinara, ranch, or taco salad dressing, and enjoy your healthy zucchini fries.

  • Don’t overcrowd the air fryer basket to keep fries crispy.
