- Prepare the ingredients: Husk and rinse the tomatillos. Prepare the jalapeño, serrano, garlic, onion, and cilantro.
- Roast: Place the tomatillos, jalapeño, serrano, garlic, and onion on a baking sheet. Roast until softened and lightly charred.
- Blend: Add the roasted ingredients to a blender with cilantro, lime juice, and salt. Blend until smooth.
- Adjust: Add water gradually until the sauce reaches a smooth, pourable consistency.
- Taste: Adjust the salt, lime, or chile heat as needed.
- Rest and serve: Let the sauce rest for a few minutes before serving.
Notes
- For a milder sauce, remove the seeds and membranes from the peppers and use less serrano.
- For more heat, add serrano gradually.
- If you want an especially smooth sauce, strain it through a fine-mesh sieve after blending.
Store in an airtight container in the refrigerator and use within 3-4 days.
