Ingredients
  

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • 1 cup milk or buttermilk for extra fluffiness
  • 1 large egg
  • 2 tbsp melted butter plus more for cooking
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Method
 

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix milk, egg, melted butter, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and mix gently (don’t overmix).
  4. Fold in chocolate chips.
  5. Heat a pan over medium heat and lightly grease with butter.
  6. Pour batter and cook until bubbles form on top.
  7. Flip and cook until golden brown.
  8. Serve warm with syrup, butter, or extra chocolate chips.

Notes

  • Don’t overmix the batter - it keeps pancakes fluffy
