Ingredients
  

  • 2 cups cooked rice cold, day-old works best
  • 2 tbsp oil vegetable or sesame
  • 1 tsp garlic minced
  • ½ cup carrots finely chopped
  • ½ cup green beans or capsicum
  • ¼ cup sweet corn
  • 2 tbsp spring onions chopped
  • 2 tbsp soy sauce
  • ½ tsp black pepper
  • Salt to taste
  • ½ tsp vinegar or lemon juice optional

Equipment

  • 1 cutting board
  • 1 knife
  • 1 Spoon or spatula
  • 1 pan

Method
 

  1. Heat oil in a large pan or wok over high heat.
  2. Add garlic and sauté for a few seconds until fragrant.
  3. Toss in all the chopped vegetables and stir-fry for 2-3 minutes.
  4. Add cooked rice and mix well, breaking any lumps gently.
  5. Pour in soy sauce, black pepper, and salt. Mix on high flame for 2 minutes.
  6. Finish with spring onions and a splash of vinegar or lemon juice.
  7. Serve hot and enjoy your quick homemade fried rice.

Notes

  • Use cold leftover rice for the best texture.
  • You can add scrambled egg, tofu, or chicken for extra protein.
