Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 cups white beans Great Northern or cannellini, drained and rinsed
  • 2 cups chicken broth low sodium preferred
  • 1 medium yellow onion diced
  • 3 garlic cloves minced
  • 1 can mild green chilies diced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 4 oz cream cheese optional, for extra creaminess
  • 1 tbsp fresh lime juice
  • Fresh cilantro optional, for garnish

Method
 

  1. Prep Ingredients - Dice onion, mince garlic, and drain and rinse beans. Slice lime if using fresh.
  2. Layer Ingredients in Crockpot - Place chicken breasts in the bottom. Add beans, onion, garlic, green chilies, cumin, oregano, salt, pepper, and chicken broth.
  3. Cook - Cover and cook on low 6-8 hours or high 3-4 hours, until chicken is cooked through and tender.
  4. Shred Chicken - Remove chicken, shred with forks, then return to crockpot and stir.
  5. Add Creaminess - Stir in cream cheese if using, until melted and smooth. Adjust seasoning as needed.
  6. Finish & Serve - Squeeze lime juice over the chili and sprinkle with cilantro if desired. Serve warm.

Notes

  • Frozen Chicken: Can be used, but add extra cooking time. Ensure internal temp reaches 165°F.
